Lobster, lobster, lobster… consider me a fan girl. As tempting as it is to keep this little piece of seafood luxury to yourself sharing this with friends and family this festive season will be worth the smiles.

- 3 fresh lobster tails
- Salt and pepper to taste
- Truffle Oil
- Lemon wedges for serving
Zesty Herb Butter
- 150 g butter softened
- 2 garlic cloves crushed
- 1 shallot finely diced
- handful of parsley leaves finely chopped, plus extra for garnish
- 1 tsp dijon mustard
- salt and pepper to taste
- small pinch of chili flakes optional
- 1 juice of lemon
Preheat the Grill
Top off or fill the firebox with charcoal. Light the charcoal using the Firehawk Electric Charcoal Starter. Install cooking grate on top. Leave the dome open for about 10 minutes, then close.
Open the bottom vent and top vent quater until the Firehawk Kamado approaches 300°F–450°F (148°C-230°C). Then begin closing the vents as needed to stabilise the kamado at your target temperature.
When the grill is hot enough, you’re ready to grill.
Prepare Lobster Tails
Using kitchen shears, cut along the top of each lobster tail, stopping at the tail fin. This allows for easy access to the meat.
Gently open the shell without detaching it completely, and lift the lobster meat, resting it on top of the shell. Season with Truff oil, salt, and pepper.
Make Zesty Herb Butter
In a cast iron pan, combine softened butter, crushed garlic, diced shallot, chopped parsley, Dijon mustard, salt, pepper, chili flakes (if using), and lemon juice. Mix well until all ingredients are incorporated.
Grill Lobster Tails
Brush the lobster tails with truffle oil for an extra layer of flavour.
Place the Lobster tails on the preheated grill, meat side down. Grill for 5 minutes until the meat is slightly opaque and grill marks appear.
Apply Zesty Herb Butter
Flip the Lobster Tails so that the shell side is down.
Brush a generous amount of the Zesty Herb Butter over each Lobster Tail, allowing it to melt and infuse into the Meat.
Continue grilling for an additional 5 minutes, or until the Lobster Meat is fully cooked and opaque.
Serve
Remove lobster tails from the grill and transfer to a serving platter.
Drizzle any remaining herb butter over the lobster tails.
Garnish with additional chopped parsley and serve with lemon wedges on the side.
