- Heat Resistant Gloves

Ingredients
- 4 chicken breast sliced into strips
- salt
- vegetable Oil for deep frying
- maple syrup
- waffle pancake mix
Buttermilk rine
- 2 cups buttermilk
- 1 tbsp kosher salt
- 1/2 tbsp garlic powder
- 1/2 tbsp onion powder
- 1 tsp sweet Paprika
Seasoned Dredge
- 3 cups plain flour
- 1/3 cup cornstarch
- 2 tsp baking powder
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp kosher salt
- 2 tsp freshly cracked black pepper
Instructions
- Get your offset smoker ready by preheating it to a steady 121°C/250°F. Use a mix of charcoal and double-trip split Ironbark Firewood for that perfect smoky flavour.
- Take your chicken breast, give it a quick rinse, and pat it dry. Place it on a cutting board, slice it into 1-inch thick strips, sprinkle with salt, and set it on a rack.
- Smoke your chicken tenders at 121°C/250°F for about an hour until they reach that irresistible smokiness. Let them cool for 10 minutes afterward.
- In a bowl, mix buttermilk, kosher salt, garlic powder, onion powder, and sweet paprika. Submerge your chicken tenders in the brine, cover, and let them marinate in the fridge for at least an hour.
- Heat vegetable oil in a Dutch oven to 180°C/350°F. In another bowl, combine flour, cornstarch, baking powder, and spices. Coat each chicken tender in the seasoned flour and fry until golden brown and crispy, about 8-9 minutes.
- Preheat your waffle maker and prepare the waffle batter according to the package instructions. Cook your waffles to perfection, adding a crispy chicken tender inside each one.
