Wood Fired Pizza

Today, I’m thrilled to introduce you to our latest obsession: Wood Fired Pizza Perfection!

Imagine this the aroma of freshly baked dough mingling with the smoky embrace of your trusty offset smoker. It’s a symphony of flavours, a dance of textures, and an experience that’s sure to ignite your senses.

Let’s talk flavour profile, shall we? Picture a medley of vibrant tomatoes, kissed by the sun and transformed into a luscious homemade sauce. Add to that the creamy richness of melted mozzarella cheese, the savoury bite of your favourite toppings, and the unmistakable char of a perfectly grilled crust. It’s a flavour explosion that’ll have your taste buds singing praises with every bite.

Now, let’s dive into the heart of our recipe: the ingredients. We believe in keeping things simple yet sensational, which is why our homemade pizza sauce comes together with just a handful of pantry staples. Think crushed tomatoes, minced garlic, aromatic herbs, and a drizzle of olive oil – that’s it! As for the pizza dough, all you need is flour, yeast, sugar, salt, water, and a splash of olive oil to bring it all together. With just a few simple ingredients, you’ll be well on your way to pizza perfection.

But simplicity doesn’t mean skimping on flavour – far from it! Our homemade sauce is a testament to the power of slow cooking and patience. As it simmers away on the stovetop, the flavours meld and mingle, creating a rich, robust sauce that’s the perfect canvas for your favourite toppings. And let’s not forget about the dough – with a bit of kneading and a lot of love, you’ll have a beautifully elastic dough that bakes up into a crisp, golden crust with just the right amount of chew.

Now, let’s talk about cooking methods. We’re big fans of the Hark Chubby Offset Smoker here at Aldergrills, and for good reason. • Long Tongs
  • Lump Charcoal, (Hardwood Lump Charcoal)
  • Ironbark Firewood
  • Red Devil Blow Torch
  • Pizza Trays

  • 500 g Flour
  • 1 tsp Salt
  • 1 7g sachet dried Yeast
  • 325 ml Water lukewarm

Secret Sauce

  • 4-6 cloves Garlic roasted
  • 1 can Tomatoes diced
  • 1 tsp Oregano dried
  • Salt and pepper to taste

Margherita Toppings

  • 8 Cherry tomatoes sliced in half
  • 4-6 leaves Basil fresh
  • 4-6 balls mozzarella

Prosciutto E Funghi Toppings

  • 2 Portobello mushrooms thinly sliced
  • 4 slices Prosciutto sliced
  • 4 tsps Mascarpone
  • truffle oil to drizzle

  • Begin by lighting your offset smoker and bringing it to a temperature of around 230°C/450°F. Place a pizza stone or a baking sheet on the grill grates to preheat along with the smoker.
  • In a saucepan, heat olive oil over medium heat. Add roasted garlic and sauté until fragrant, about 1 minute. Pour in crushed tomatoes, dried oregano, salt, and pepper. Simmer the sauce for 10-15 minutes, allowing the flavours to meld together. Set aside to cool.
  • In a large mixing bowl, combine flour, instant yeast, sugar, and salt. Gradually add warm water and olive oil, mixing until a dough forms. Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic. Divide the dough into individual portions according to the size of pizzas you want to make.
  • Roll out each portion of dough into a round shape, ensuring it's thin and uniform in thickness. Transfer the rolled-out dough onto parchment paper for easy transfer to the smoker.
  • Spread a generous amount of homemade sauce over each pizza dough, leaving a small border around the edges. Sprinkle shredded mozzarella cheese on top of the sauce, then add your favorite toppings.
  • Carefully slide the pizzas onto the preheated pizza stone or baking sheet in the smoker. Close the lid and let the pizzas cook for 10-15 minutes, or until the crust is golden brown and the cheese is bubbly and melted.
  • Once the pizzas are done, remove them from the smoker and let them cool for a minute or two. Slice them up, serve hot, and watch as your friends and family dig into these wood-fired delights with delight!
