  • Ironbark Firewood
  • Red Devil Blow Torch
  • Pizza Trays

Ingredients

Dough

  • 500 g Flour
  • 1 tsp Salt
  • 1 7g sachet dried Yeast
  • 325 ml Water lukewarm

Secret Sauce

  • 4-6 cloves Garlic roasted
  • 1 can Tomatoes diced
  • 1 tsp Oregano dried
  • Salt and pepper to taste

Margherita Toppings

  • 8 Cherry tomatoes sliced in half
  • 4-6 leaves Basil fresh
  • 4-6 balls mozzarella

Prosciutto E Funghi Toppings

  • 2 Portobello mushrooms thinly sliced
  • 4 slices Prosciutto sliced
  • 4 tsps Mascarpone
  • truffle oil to drizzle

Instructions

  • Begin by lighting your offset smoker and bringing it to a temperature of around 230°C/450°F. Place a pizza stone or a baking sheet on the grill grates to preheat along with the smoker.
  • In a saucepan, heat olive oil over medium heat. Add roasted garlic and sauté until fragrant, about 1 minute. Pour in crushed tomatoes, dried oregano, salt, and pepper. Simmer the sauce for 10-15 minutes, allowing the flavours to meld together. Set aside to cool.
  • In a large mixing bowl, combine flour, instant yeast, sugar, and salt. Gradually add warm water and olive oil, mixing until a dough forms. Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic. Divide the dough into individual portions according to the size of pizzas you want to make.
  • Roll out each portion of dough into a round shape, ensuring it's thin and uniform in thickness. Transfer the rolled-out dough onto parchment paper for easy transfer to the smoker.
  • Spread a generous amount of homemade sauce over each pizza dough, leaving a small border around the edges. Sprinkle shredded mozzarella cheese on top of the sauce, then add your favorite toppings.
  • Carefully slide the pizzas onto the preheated pizza stone or baking sheet in the smoker. Close the lid and let the pizzas cook for 10-15 minutes, or until the crust is golden brown and the cheese is bubbly and melted.
  • Once the pizzas are done, remove them from the smoker and let them cool for a minute or two. Slice them up, serve hot, and watch as your friends and family dig into these wood-fired delights with delight!
