I started by choosing firm, ripe pears, which I carefully halved and cored to create little pockets for the goat cheese. The tangy, creamy goat cheese was a perfect filling, adding depth and a subtle tanginess that contrasted beautifully with the sweetness of the pears. Each pear half was then wrapped with a strip of bacon, which provided a salty, crunchy exterior once roasted.

The roasting process brought everything together. The pears became tender and slightly caramelized, their natural sweetness enhanced by the gentle heat. The bacon crisped up nicely, adding a savory crunch that was irresistible. Finally, a drizzle of honey over the warm pears added an extra layer of sweetness, tying all the flavors together.

  • Hark Chubby Smoker
  • Heat Resistant Gloves
  • FireBoard 2 Drive
  • Lump Charcoal, (Hardwood Lump Charcoal)
  • Ironbark Firewood
  • Red Devil Blow Torch
  • Baking Tray


  • 3 Corella or Bosc pears halved and cored
  • 6 tbsps goat cheese
  • 6 pieces thick-cut bacon

For Serving

  • Sea salt flakes
  • Honey
  • 1 sprig Rosemary fresh
  • Chili flakes optional


  • Preheat your offset smoker to 190°C/375°F. Use a combination of hardwood and fruitwood for a mild, sweet smoke flavour (I used apple wood).
  • Line a baking tray with baking paper.
  • Halve and core the pears.
  • Stuff each pear half with 1 tablespoon (or desired amount) of goat cheese.
  • Wrap each pear half with 1 slice of bacon and place on the baking tray.
  • Place the baking tray with the pears in the offset smoker.
  • Roast at 190°C/375°F for 40 minutes, or until the bacon is crisp and the pears are tender.
  • Once the bacon is crispy, remove the pears from the smoker.
  • Sprinkle a little sea salt over the pear halves.
  • Drizzle with honey.
  • Garnish with fresh rosemary.
